Third Window began with a simple belief: Beer is an expression of place.

Long before brewing became industrialized, beer was inherently local. It reflected the grain, water, agriculture, climate, and traditions of the communities that made it.

In 2014, our Founder & CEO, Kris Parker, began developing a business plan with fellow USC MBA classmates Adam Nazar and John Neale.

Together, they envisioned a brewery grounded not only in craftsmanship, but in agriculture, locality, and a deeper appreciation for where beer comes from.

Construction began in 2015.

Along the way, Kris developed a friendship with Patrick Rue, founder of The Bruery, through collaborations exploring the intersection of beer, wine, and agriculture. When it came time to build Third Window, that connection helped bring the brewery to life.

The brewhouse used today was originally built for Mendocino Brewing Company. After it was decommissioned, it sat unused in a field for years before being rescued and restored by The Bruery. It is now the second oldest operating brewing system in the United States and continues to produce every beer.

Third Window's founding brewer, Tyler King, also joined from The Bruery, helping bring the brewery's vision to life from day one.

In the spring of 2016, Third Window opened its doors.

While wine has retained a reverence for terroir—a French term often translated as "sense of place"—and its influence on flavor and character, much of modern beer has become disconnected from those roots.

Third Window was founded to explore what beer can become when that connection is restored.

Third Window Saison is an expression of local terroir, brewed with Pilsner malt and unmalted wheat grown and farmed by the Fess Parker Ranch in Los Olivos. It draws from the farmhouse traditions of southern Belgium, where saisons were born in rural wine regions and brewed with the grains at hand, often fermented with the same mixed yeast cultures used for wine and shaped by the rhythm of the seasons.

Light in body and golden straw in color, this bottle-conditioned batch offers notes of chamomile, Meyer lemon, and pepper with a classically crisp, refreshing finish. True to the tradition, Third Window Saison is shaped by the land that made it.

We use premium, industry-standard materials to protect every shipment. Depending on the bottle and destination, we use a combination of insulated foam box inserts, custom-fit air column bags, and heavy-weight cardboard shippers to prevent damage. For added peace of mind, we offer shipping protection against loss or damage at checkout through OrderProtection.com.

For wine, we recommend storing bottles on their side in a dark, vibration-free environment with good humidity, ideally between 55-60°F. Spirits like whiskey should be stored upright in a cool, dark place (60-70°F) away from direct sunlight to preserve their quality.

Yes. During periods of extreme heat, we can include optional ice packs in our insulated shippers and select an overnight shipping service & a Weather Waiver. Otherwise, it would be unsafe to ship in those conditions. We can also hold your shipment at no charge for up to one year upon request. We flag temps above 72 °F or below 32 °F as extreme.
