Cognac is a barrel-aged grape brandy produced exclusively in the Cognac region of southwest France, distilled primarily from Ugni Blanc grapes using copper pot stills before aging in French Limousin or Tronçais oak. Classification by age - VS, VSOP, XO - defines the minimum time a blend spends in barrel, with older expressions developing dried fruit, rancio, and spice complexity. Growing zone also matters significantly, as Grande Champagne, the most prized cru, produces eaux-de-vie with exceptional aging potential and floral finesse, evident in both Vallein Tercinier Lot 90 and Cognac Park XO. Hennessy VS represents the approachable, fruit-forward entry point of the category, while Remy Martin's Louis XIII End Of Year Fireworks Edition, a blend of up to 1,200 eaux-de-vie aged as long as a century, occupies the opposite extreme.
