Non-diffuser tequila is produced exclusively in the Jalisco highlands and lowlands using traditional tahona stone or roller mill extraction, where slow-roasted agave piñas are crushed mechanically rather than chemically stripped by an industrial diffuser, preserving the cooked agave character that defines the category. Fortaleza, operating out of the historic La Rojeña distillery site in Tequila, anchors much of the conversation, with their Blanco, Reposado, and Añejo demonstrating how oak aging layers vanilla and spice over a foundation of roasted agave. El Tesoro and Cascahuin represent the highlands and lowlands respectively, each pulling distinct mineral and citrus notes from terroir. Lalo Blanco sits at the more approachable end of the spectrum, while Tears of Llorona Extra Añejo, finished in multiple wood types, represents the category's most aged and complex expression.
