François Crochet Sancerre Blanc Exils is a biodynamic, barrel-agedwhite wine made by François Crochet in the AOC Sancerre (Loire) using the Sauvignon Blanc variety.
In 1998, having spent time in wineries in France and New Zealand, François Crochet returned to his father’s vineyards in the town of Bué, near the French city of Sancerre, and became the third generation of winemakers in his family. A total of 10 hectares of vines scattered throughout the area are biodynamically cultivated by him and his wife, and they have their own way of working in the winery. This results in precise and refined limited production wines with great acidity and freshness.
François Crochet Sancerre Blanc Exils comes from a plot near the town of Thauvenay which is characterised by having a rich flint subsoil. They use biodynamic agriculture with great care for the environment and the strain yields are limited to 35hl / ha. When the grape reaches optimum ripeness, it is harvested by hand.
In the winery, the grapes selected to make François Crochet Sancerre Blanc Exils are gently pressed. The must is then cold-settled before winemaking begins. Following fermentation, the wine ages on its lees for 6 months. Before being bottled, it is not filtered but is very lightly clarified.
As its name suggests, François Crochet Sancerre Blanc Exils is the result of a pure flint cuvée. A very mineral wine full of substance and life.
Whole-cluster pressed, cold settled overnight, followed by a natural fermentation in steel with aging up to 18 months (though usually less with Les Exils) in various containers (depending on the year and taste of the grapes) between steel, old oak tronconic (vertical) oak, concrete vats and egg-shaped vessels.
