The West Cork distillery started as a pet project by John O’ Connell, Denis McCarthy and Ger McCarthy in 2003 in Union Hall, West Cork. In 2013 after much expansion WCD moved to a larger distillery in Skibbereen, West Cork where it now resides. It now operates as only one of the few independent distilleries in Ireland. Each finished in a different type of cask (port, sherry, and rum), the soft and creamy Irish whisky takes on just a bit of the character from the barrel it was matured in. The rum cask release has a creamy and textural palate of sweet grains with just a bit of that sweet molasses that you would associate with a Caribbean rum.

West Cork doesn’t follow the rules and that’s exactly why this bottle stands out. The 12 Year Old Rum Cask Finish is a tropical twist on Irish single malt: triple distilled, aged patiently, and finished in Caribbean rum barrels that bring unexpected warmth, spice, and sweetness. It’s Ireland by way of the islands, smooth, sunny, and quietly adventurous.

Toasted coconut, caramel, and grilled pineapple, like dessert by the beach. Hints of banana bread and soft oak follow. Creamy and light bodied. Sweet vanilla, tropical fruit, baking spice, and a touch of molasses glide over smooth malt. Medium-long with lingering warmth, notes of spiced sugar, nutmeg, and oak fade with elegance.

Matured for 12 years in first fill bourbon casks before finishing in Caribbean rum barrels, this single malt blends Irish distilling tradition with sun-soaked cask character. For wine, we recommend storing bottles on their side in a dark, vibration-free environment with good humidity, ideally between 55-60°F. Spirits like whiskey should be stored upright in a cool, dark place (60-70°F) away from direct sunlight to preserve their quality.
