Tenryo's Hidahomare is a junmai ginjo sake crafted from Hidahomare rice local to the Hida District in a brewery 350 years old.
Encased in an artisan wicker basket symbolizing the brewery's 350-year history, this sake is offered to us their "love potion". This is a dry but slightly rich Sake with notes of pear and apple, papaya and a hint of cocoa. The brewers use a "flower yeast" to make a very soft, round and clean sake that is milled to Daiginjo rates (50% remaining). So delicious and charming,
Aroma: Gentle and inviting with steamed rice, pear, melon, and a touch of anise, keeping a calm, traditional ginjo profile rather than overt fruitiness.
Palate: Soft and round on entry, showing clean rice sweetness and subtle umami, supported by moderate acidity that keeps the sake balanced and food-friendly. Texture: Smooth and slightly plush, with a comforting, rice-forward feel. Finish: Clean and lightly dry, lingering with savory rice and faint mineral notes.
