Daniel Kelly is a Mexican winemaker based in Valle de Guadalupe and originally from Ensenada. Holding a degree in Gastronomy, Daniel began his journey into winemaking while working at a restaurant owned by a winery. He has worked at wineries in Mexico, New Zealand, the United States, and Chile, and in 2018 he decided to launch his own wine label.
Fractura Blanco 2021 marks the beginning of Daniel’s work as a minimal-intervention winemaker. His wines are produced through spontaneous fermentation, are unfiltered, contain no additives, and have no added sulfites.
Fractura Blanco, a white wine with a straw-yellow color, citrus notes, and pronounced acidity. It offers aromas reminiscent of apple strudel, bread crumbs, and guava, making it complex and intriguing. Versatile and easy to enjoy, with a short to medium finish.
The grapes are directly pressed using basket presses. The juice is blended in a stainless-steel tank, where it is allowed to settle for 24 hours under temperature-controlled conditions. It is then transferred to neutral French oak barrels, where it undergoes spontaneous fermentation for 2–3 months. Once fermentation is complete, the wine remains in the same barrels for an additional 4–6 months of aging and development.
An excellent companion to vegetable-based dishes, fish, and seafood, as well as mild or fresh cheeses. Perfect for enjoying at sunset on the beach or on a warm day.
