Fósforo Tobalá is produced by mezcalero Aarón Alva Sánchez San Nicolás Huajuapan, Puebla using cultivated Maguey Tobalá which grows for 8-15 years. The harvested plants are cooked underground for 5-8 days, shredded, and then naturally fermented for 10-14 days in open-air wooden vats. The pulp and liquid are then double-distilled in copper pots. This Tobalá is bottled at 45% ABV.
Fósforo Mezcal is a female founded brand, led on both sides of the border by Lisa Detwiler and Mariana Hernández. Production is lead by fourth-generation master-mezcalero Aarón Alva Sánchez, Mariana’s husband.
Aromas include fruit (pineapple, green apple, pear), agave, and a cheese-like funk. Flavors feature fruit, agave, vegetal notes (bell pepper), minerality/wet stone, and hints of spice. The overall impression is positive, with the spirit described as delightful and well-balanced.
