Caol Ila is a single malt Scotch whisky distillery situated on the eastern shore of the Sound of Islay, overlooking the Paps of Jura in Scotland. The distillery uses heavily peated malted barley and tall copper pot stills that produce a lighter, more coastal style of Islay smoke than its island neighbors. Independent bottlers Gordon and MacPhail have drawn extensively from Caol Ila's warehouses, releasing the Private Collection 1997 Hermitage Wood Finish, the Private Collection 2003 Sassicaia Wood Finish, and the 2005 Old Cask Strength expression. Signatory Vintage contributed the 1992 15 Year Old Hogshead, while Gordon and MacPhail's Connoisseurs Choice series yielded the 1990 12 Year Old. The distillery's own Mr. Peat sits at the accessible end of the range, with the Caol Ila 25 Year Old representing the house's most extended maturation.
