Cooper Spirits produces Slow & Low in Philadelphia, drawing on the 19th-century American tradition of rock and rye — a bartender's remedy that originally combined rye whiskey with rock candy. The name itself references the process of gently heating whiskey to dissolve the rock candy without evaporating the alcohol. The base is a 6-year-old straight rye whiskey that undergoes maceration with orange peels before being infused with raw honey and dosed with horehound — an herbaceous perennial plant historically found in lozenges and folk remedies. Each bottle is filled by hand, and the result is a spirit that bridges the gap between a proper aged rye and a botanical liqueur.

Strong black tea and old-fashioned herbal lozenges lead the nose, followed by candied orange peel and a dusting of cinnamon. A faint honeyed sweetness rounds out the backdrop without turning cloying.

The entry is immediately citrus-driven — lemon peel and bright orange — before the 6-year-old rye asserts itself with black pepper, rye spice, and a solid oak backbone at mid-palate. A wave of vanilla and subtle tootsie roll sweetness emerges as the sip develops, balanced by the horehound's bitter herbal character and a spiced apple undercurrent.

Dry and surprisingly long, with lingering bitter herbs, rye grain, and a trailing echo of orange zest. The honey recedes quickly, leaving the finish closer to a straight rye than a typical liqueur.
