Les Rendez-vous de Billecart-Salmon No.2 Pinot Noir Extra Brut Champagne comes from two historic terroirs in Montagne de Reims: Ambonnay and Verzenay. It’s a pure Grand Cru Pinot Noir built on a base from 2014 (rated an ‘Outstanding’ year to Robert Parker’s Wine Advocate) and reserve wines from 2012, which Jancis Robinson called: “An exceptional vintage in Champagne.” It was aged on the lees for 65 months (more than a year longer than its predecessor was) and received a very low dosage, allowing its purity to shine. Although some Pinot Noir Champagne can tend towards the red berry fruit flavours, this is a far more mineral-led affair. So, expect notes of cherry blossom, violet creams, floral honey, biscuits, buttered toast, grapefruit zest, tangerine, white pepper, sea salt, liquorice and just a hint of raspberry sorbet. We think this is even better than the first expression, and so we can’t wait to see what Billecart-Salmon have in store for us with instalment No.3.
