Sombra Mezcal Joven 750ml

Sombra has a spicy, fruity and smoky nose with a high note of citrus. It is smooth and warming to the palate, with a clean and fruit driven finish. Un-rectified and distilled to 45% alc by Vol. 100 kilometers south of Oaxaca, Mexico, along the Pan American Highway, and then another 20 km on a winding dirt road brings you to the small village of San Luis Del Rio. It’s here in this pueblo of 200 people, at an elevation of 8,000 feet, where the agave is grown and the spirit is distilled. It is a narrow, hot valley, with steep slopes full of the espadin agave (the genetic mother to the blue agave). The Rio Hormiga Colorada (Red Ant River) flows through it. The espadin agave are planted by almost everyone in small village garden plots until they are about two years old (and two feet tall). At this time they are uprooted, their leaves are tightly bound and the roots are cut off. They are left in the shade to heal for about fifteen days. Next they are transported to the outlying hills where they are transplanted and left to grow. After another four to ten years of little more than weeding a few times a year, they are harvested.

For wine, we recommend storing bottles on their side in a dark, vibration-free environment with good humidity, ideally between 55-60°F. Spirits like whiskey should be stored upright in a cool, dark place (60-70°F) away from direct sunlight to preserve their quality.
