Process concludes with a ritual of gratitude, as Jacinto returns the first drops of mezcal to the soil—a profound reminder that everything has its time and place under the sky. With the Cuishe maguey, growing wild and free, untouched by chemical fertilizers or pesticides. Organically nurtured in rich soil for 10 to 14 years, it is distilled with pure, deep well water using time-honored methods.
The result is a crystal-clear mezcal, free of additives, allowing the maguey’s natural essence and flavors to shine. Produced from scratch at our small-scale distillery, where we honor the rhythm of the Earth, guiding the slow creation of mezcal from a secret recipe passed down through generations to Maestro Mezcalero Jacinto Gutiérrez, inspired by the spiritual heritage of his Zapotec ancestors.
