Kuroushi Junmai Sake 720ml
This gem hits a bullseye-balance with a punchy medium body, nice prominent acidity, layered rice flavors, and just enough umami. Kuroushi's Junmai is excellent as a versatile food pairing sake. It's bold enough to stand up alongside a lot of food, but also mellow enough to drink on its own.
This sake is one of those that thoroughly breaks the generalization that if something is highly polished, it should probably say "Ginjo" on the bottle. Kuroushi calls this 50% polished Yamada Nishiki sake a Junmai. And due to brewing techniques applied (like the choice of yeast, brewing temperatures, and others) to the High-polish rice, it comes out drinking along the lines of other Low-polished sakes, despite its crazy high refinement.
