A slightly fuller yellow colour though still with a green tint. Here the opulence of the fruit is the most evident with a peachy note. A slight honeysuckle note indicates the ripeness of the fruit. Several layers of flavour interweaved here, with some tannins in the structure. This is ripe but well balanced, with a lot more to be revealed later on. Drink from 2027-2033.

Sebastien Christophe started with a small inheritance of just a couple parcels of Petit-Chablis and in a little over a decade he has managed to accumulate some prime plots throughout the appellation, including 1er and Grand Crus. How has he done that? Hard work, persistence, moxy etc., whatever you want to call it he spends long hours in the vineyards where, like all great growers, he believes the most important work is done.

In the cellar it’s all about highlighting the quality of the fruit and the nuances of the terroir. Sebastien is extremely judicious with oak, preferring only stainless steel for the majority of his wines. He likes the taught, mineral driven style; the classic oyster shell and lemon peel but with Christophe the depth and complexity of the wines is kicked up several notches thanks to the excellent fruit he harvests.
