2016 Cabo de Hornos Cabernet Sauvignon
Violet-red in color. Red fruit notes are present on the nose, as are some ripe black fruits such as blackberry, blueberry and cassis, as well as tobacco and cedar notes. On the palate, the wine has a rich acidity and an excellent acid-tannin balance, along with a long, persistent finish. This wine will continue to evolve aging in the bottle.

Having tasted five older vintages of this wine, I could not help but envisage the evolution of the 2014 Cabo de Hornos Cabernet Sauvignon. It is produced with the same fruit from volcanic and clay soils from the cooler Andes part of the Valle del Cachapoal that has been used since the 2006 vintage. 2014 was warmer and riper than 2013, but there were no heat peaks, so the ripening was also slow. It was also fermented in small batches according to the soils and aged in 60% new oak for 18 months. This is very balanced, extremely young and fruit-driven. This has the Cachapoal brightness and light, still somehow covered by the baby fat that needs to be rendered by time in the bottle. I should taste 20 years of wines like this to understand where they are coming from and where they will go. Thanks to the San Pedro team, I have understood this wine forever. 11,157 bottles were produced.
