1792 Cognac Cask Finish Bourbon
The oldest fully operating distillery in Bardstown has released a new permanent addition to its portfolio. Barton 1792 Distillery is launching 1792 Cognac Cask Finish, the first cask-finished expression to join the lineup permanently.
The release builds on Barton’s 1792 Small Batch Bourbon, named Best Kentucky Small Batch Bourbon at the 2025 World Whiskies Awards, and then is aged for a minimum of six months in former cognac casks on the top rickhouse floors.
The result is layers of fruit and spice, according to the tasting notes. It has a nose of dark cocoa and caramel. On the palate, it’s stone fruit — plum, apricot and cherry — rounded by bananas Foster, vanilla and sweet oak.
“We’ve experimented with a range of premium cask finishes, but cognac immediately stood out for how naturally it complements our Small Batch Bourbon,” Ross Cornelissen, Barton 1792 master distiller, said in a news release. “Extended finishing in Cognac casks reveals dessert-like notes and layered complexity, while showcasing the full-bodied character of the Small Batch Bourbon and its signature high-rye recipe.”
