Under master distiller emeritus Richard Paterson, Dalmore explored a new style of Highland whisky marked by refinement, elegance and a commitment to sourcing quality casks. The flagship Dalmore 12 Year Old is first matured in American oak bourbon barrels before finishing in European oak sherry casks. This results in layered palate of gingerbread and praline with hints of chocolate, chestnut honey and Dalmore’s hallmark notes of candied orange.

The Dalmore 12 year old, with its intricate aromas and flavours, is recognised as a whisky with character far beyond its age. This was Andrew Mackenzie’s original masterpiece. At a time when it was standard to mature whisky for six years, Andrew Mackenzie demonstrated his pioneering character by being one of the first to double the maturation period. His boldness truly paid off, The Dalmore 12 year stands apart as an exceptional whisky, as much today as it did in the 19th century.

Matured for an initial nine years in American white oak ex-bourbon casks, the spirit is then divided for its final flourish. One half remains in the bourbon barrels, while the other is transferred to 30 year old Gonzalez Byass Matusalem oloroso sherry butts before they are reunited to create this phenomenal whisky.

Depending on the bottle and destination, we use a combination of insulated foam box inserts, custom-fit air column bags, and heavy-weight cardboard shippers to prevent damage. For wine, we recommend storing bottles on their side in a dark, vibration-free environment with good humidity, ideally between 55-60°F. Spirits like whiskey should be stored upright in a cool, dark place (60-70°F) away from direct sunlight to preserve their quality.
