The García Quiroz family has produced agave spirits in Santa María Sola de Vega for three generations, relying on conical stone ovens, Montezuma wood vats, and double clay pot distillation that defines the region’s ancestral style. This small 225 liter batch was distilled by Maestro Rafael García Aragón in December 2024 using capón stage Espadín, harvested after the quiote was cut and the plant was left to continue concentrating sugars for months or years. The agaves were roasted three days over river stones and local firewood, then milled by hand or electric shredder depending on fiber resistance. Fermentation relied solely on wild yeasts in open wood vats with mountain stream water added in stages to control temperature and extraction. Distillation was performed in olla de barro with Rafael using a venencia and jícara to monitor the cuts without adjustments. The spirit opens with green agave, citrus peel, light smoke, herbs, and mineral notes. The palate is silky with candied citrus, roasted agave, pepper, mint, and stone driven freshness, finishing long and clean with subtle smoke.
