Winemaker Notes
This vintage is the epitome of a terroir-driven wine that has immense power without sacrificing any elegance. The wine explodes out of the glass with boysenberry fruit, crème de cassis, cedar, cigars, crushed stone and lead pencil accompanied by a perfume of violets. Deep and full-bodied, rich with astonishing texture, it manages to stay fresh and balanced throughout with a finish that does not stop.
Tasting Notes
In the glass, the Patrimony Cabernet Sauvignon unveils a deep, opaque garnet hue. The nose is a captivating medley of ripe blackberries, cassis, and dark cherry, complemented by notes of cedar, tobacco, and a subtle hint of violet. On the palate, the wine unfolds with layers of complexity—rich, velvety tannins frame flavors of blackcurrant, plum, and dark chocolate. The finish is enduring, leaving a lingering impression of fine-grained tannins and a touch of spice.
How to Enjoy
To fully appreciate the nuances of Daou Vineyards Patrimony Cabernet Sauvignon, decant the wine for at least an hour before serving. Serve it in a large-bowled red wine glass to allow the aromas to evolve and the wine to breathe. This is a wine that benefits from a slightly warmer serving temperature, around 60-65°F. Take your time to savor each sip, allowing the wine to open up and reveal its full spectrum of flavors.
Food Pairing
Pair Daou Vineyards Patrimony Cabernet Sauvignon with hearty and flavorful dishes. Grilled ribeye steak, braised short ribs, or lamb chops with a rosemary-infused jus complement the wine's robust structure. For a delightful contrast, try it with aged cheeses like Pecorino or Gouda, allowing the wine's tannins to harmonize with the cheese's complexity. Dark chocolate desserts with berry compote can also provide a decadent pairing.
Overall
Daou Vineyards Patrimony Cabernet Sauvignon Adelaida District 2019 is a masterpiece that captures the essence of Paso Robles' Adelaida District and the Daou brothers' dedication to producing world-class Cabernet Sauvignon. Daniel Daou's success in producing classics in Paso Robles' Adelaida District continues. Sipping this wine is akin to taking a swan dive into a satin-rimmed, bottom- Hess lake of boysenberry and crushed violets. Up on the surface, chalky limestone tannins have the texture and flavor-of baker's chocolate and graphite. Juicy plum and a wealth of balsamic- and cedar- blessed fruit generously spreads on the finish.

The 2019 Cabernet Sauvignon continues to show brilliantly. (I rated it 97-100 from barrel last year.) It has a quintessential Cabernet nose of pure crème de cassis, crushed stone, lead pencil, graphite, and tobacco that gains depth and richness with time in the glass. Deep, full-bodied, rich, and incredibly textured, yet still fresh, light on its feet, and beautifully balanced, this gorgeous Cabernet shows what's possible with the variety from Paso Robles.

98 Robert Parker's Wine Advocate
The 2019 Patrimony Cabernet Sauvignon was made with free-run juice and matured for 30 months in 100% new French oak. It has a deep ruby color and alluring tones of truffle, brown sugar and coffee to begin, opening with time to very pure cassis, boysenberry, tobacco, garrigue and aniseed. The palate is supple and fresh with surprisingly restrained, mineral-laced fruits and a fan of spicy accents across the long finish. This ultra sleek, elegant Cabernet evolves continually in the glass and has the harmonious structure it needs to go the distance in the cellar.

A benchmark California Cabernet Sauvignon which showcases the strength and tenacity of this revered grape. On the nose, a juxtaposition of expressive, bright fruit plus a grounded earthiness. The delicacy yet force of this wine creates a most pleasant tension that you seek to reconcile with each sip. Flavours of blackberry, bramble and dark chocolate sit side by side with floral and sweet cedar notes. Tannins display laser-sharp integration. A wine with thoughtful, intentional power.

Deep, rich and plush on the nose showing cassis, blackberries with hints of dark olives, fennel, dark chocolate, cigar box and elderberry characters. Full-bodied and fleshy on the palate with an abundance of tannins, which are extremely fine-grained. Restrainedly opulent, deep, structured and long.
