Mal Bien Tequilero de Victor & Emanuel Ramos 750ml
Father and son team Victor and Emmanuel are 3rd and 4th generation to distill in Mengoli de Moreals. Their palenque was set up 20 years ago and before that they worked at their grandfather's, Pablo Ramos Sanchez. This area, Miahuatlan, is renowned for the abundance of Karwainski (Madrecuixe, bicuixe, tobaxiche) and the use of an unusual additional apparatus on their copper potstills called the "refrescador". The refrescador sits on top of the potstill like a mini water cooled column. It catches and condenses the heaviest spirits as form further rectifying the spirit slightly, but also adding depth. The result are some of the most pure agave driven mezcals in Oaxaca. The Ramos family is well known to produce some of the regions very best spirit. They have two underground ovens, one with 13 and the other with 8 tons of capacity. Roasting take between 6 days over oak, alder and mesquite wood. The Verde is cooled for 6-7 days before milling on an ox drawn tahona. Fermented in open sabino vats for 4-8 days using local well water.
