Dassai Ambition is not brewed from a recipe, but from a challenge. This sake is the result of the "Yamada Nishiki Project," a nationwide competition created by Dassai to inspire and reward Japan's most talented rice farmers.
Entry numbers jumped from 45 to 144 by 2023, and only the best lots make it into Ambition.
This bottling is crafted from the competition-winning Yamada Nishiki rice, setting a new standard for the quality of the raw ingredient. The sake itself is brewed by a select team given the freedom to pursue creativity beyond the bounds of consistency, embodying the Japanese spirit of Shuhari-mastering tradition in order to transcend it.
The brewery freezes the sake straight after pasteurization, then seals it in a rapid‑cooling titanium bottle. Quick chilling at - 30 °C locks in the just‑pressed profile and shields the liquid from light, oxygen, and heat until you open it.
