In 2015, The Spirit of Haiti built a small natural warehouse in Port au Prince. Over time, the warehouse has been filled with previously used casks, ranging from rum casks (like Caroni, Worthy Park and Bielle) to Cognac, Whisky and sherry casks from Bodegas Lustau. The barrels were then filled with fresh Clairin distilled by Michel Sajous, Fritz Vaval, Faubert Casimir and Le Rocher as experimental single cask releases to understand how Clairin develops in a very light aging process. The length of maturation is in months, not years, as the aging aims to retain the sense of raw material and soul of the spirit. These Ansyen - or “aged” casks represent a new chapter in the history of Clairin as they are among the first expressions to be aged in some of the most legendary barrels in the world.

Clairin Ansyen Sajous 29 months #SA17OL-5 is a single cask selected by Kate Perry, US Market Manager for La Maison & Velier. #SA17OL-5 references the 2017 Sajous harvest, barreled on November 30th, 2017 and aged 29 months in ex-Oloroso sherry cask from Lustau Bodegas. It is one of the first expressions of this type and has been bottled straight from the cask at 56.4% abv.

Depending on the bottle and destination, we use a combination of insulated foam box inserts, custom-fit air column bags, and heavy-weight cardboard shippers to prevent damage. For wine, we recommend storing bottles on their side in a dark, vibration-free environment with good humidity, ideally between 55-60°F. Spirits like whiskey should be stored upright in a cool, dark place (60-70°F) away from direct sunlight to preserve their quality.
