Aqara Agave de Los Andes Rito 750ml

This unusual agave spirit is distilled in Peru from the Agave Americana Expansa Gentry and Agave Cordillerensis. The distillery run by Marco Suarez Lara is taking the great Mexican tradition and making it distinctly Peruvian. Located in the town of Caraz in the Ancash region of Peru, the small distillers wild harvest these agave at around 10 years of age. Roasted over eucalyptus wood and crushed in a hammer mill, the agave is fermented with the fibers in a stainless steel tank. It is distilled on small copper pots and the resulting spirit is completely unique and delicious, albeit in a completely different profile than most mezcal. The eucalyptus adds a lovely bouquet of sweet unctuous smoke to the complex agave aromas. This is an incredible new avenue for this special distillery in Peru and a welcome departure from the cleaner more linear non-smoked expressions.
