Kweichow Moutai, distilled in Maotai town within Guizhou Province's Chishui River valley, represents the most celebrated expression of sauce-aroma baijiu, a style defined by its complex fermentation process using qu starter cultures and repeated distillation cycles. The high-altitude, humid microclimate of Guizhou is considered inseparable from Moutai's distinctive character.
