The Huard Family's orchard has been located in Suisse-Normand for more than five generations, where the soils are a loamy combination of silt and clay. The cider is fermented and aged for about eight months, then distilled in a traveling column still. The spirits then go into large, elongated barrels, stained black by time, or well-seasoned 400-liter barrels where their complex apple flavors develop.

This 20-year-old Calvados is actually a blend of the 1990 and 1992 distillations. It came to light in 2005 that the 1990 distillation had fallen just below the required 40% ABV level required for Calvados, so the decision was made to combine the 1990 with some of the 1992 to regain the correct balance.

On the palate, this calvados is full of baked apples, toffee, fine tobacco smoke, almond skins, and honey.
