5 Sentidos Pizorra is crafted by maestro mezcalero Delfino Tobón Mejia with wild agave Pizorra (A. Marmorata) that dots the clay mountains that surround the town of San Pablo Ameyaltepec. Maestro Delfino uses a single-pass, three-plate “reflux” style still that he crafted himself from copper and stainless steel. The nose on this mezcal has hints of cinnamon, plump cherries, red Airheads and under-ripe tropical fruit. The palate has notes of gingerbread, strawberry shortcake, and peppermint.
