100% fermented in Terracotta Amphora, always a lighter style than the Cerasuolo. Very clear intense, clean aromas of freshly crushed cherry & redcurrant fruit, exotic spice and Mediterranean herbs. It has a great chewy texture and saline minerality showing. The finish is elegant and persistent.
The COS 2016 Pithos Rosso is bright and luminous with a very buoyant and direct delivery of aromas. It feels like there could be a vague spot of volatile acidity, but this serves to prop up (in Italian: "dare spalla") the careful intensity of this fragile and elegant bouquet. This wine is fermented in clay amphorae. This vintage results in a lean and elegantly streamlined mouthfeel.
