L'Archetipo Greco Bianco Salento 2018
100% Greco Bianco from the limestone soils of Salento. Natural yeast fermentation with 4-5 days of maceration on the skins is followed by soft-pressing of the must. Fermentation continues for two more months at low temperatures to preserve freshness and acidity. The wine was then aged on the lees for about 5-6 months in stainless steel. It underwent natural fining and stabilization, with no fining agents added. A very low amount of sulfur dioxide was added before bottling. The result is a wine with a beautiful golden yellow hue and notes of flowers and honey in the nose. The palate is soft with fresh fruit flavors and minerals on the finish. Ideal as an aperitif but also for lunch and dinner, in particular fishes main courses, vegetables and risotto.
