This is Taras's answer to Amber's Pinot Noir Home.... It's the dark to her light, the beast to her beauty.
The process is pretty simple, as Taras says, "I just take all the whole bunches, squash it up a bit, do bugger all".
The organically grown vineyard is super late ripening. Taras lets it hang out there on the vine for as long a possible. This hands-off approach gives the wine a visceral quality, it's not refined like Amber's, it feels a little wild.
